The roastery is approaching its tenth anniversary — a ticketed 10 Years Party is scheduled for July 2026 — and has built a following well beyond the Netherlands. Their self-stated ethos: "Less marketing, more coffee."
Founded in Amsterdam sometime around 2016, Friedhats set out to source and roast coffees based purely on flavor rather than category or trend. The operation has grown to span two distinct sites in the city: the Bos en Lommer location functions as a brewing and retail hub, while roasting is handled separately in Houthavens. Sprudge documented the opening of a separate concept called FUKU, signaling the roastery's continued physical expansion within Amsterdam.
Fridhats sources with an explicit flavor-first approach, roasting to accentuate a coffee's natural characteristics rather than impose a house style. Current offerings reflect that range: a competition-grade Colombian CGLE Sudan Rume washed lot, a Uganda Nyabirongo natural, and Peruvian washed and natural lots, offered in both espresso and omni-roast profiles. Competition lots are priced at a premium ($61–$84 per 250g), while everyday offerings sit in the $17–$29 range. The roastery also maintains an active education side, running training for cafe and wholesale clients, and publishes detailed editorial content covering processing methods like mosto fermentation, variety deep-dives on Pink Bourbon and peaberries, and sourcing transparency through farm-level profiles.
