Cuvée Coffee has been roasting in Austin, Texas since 1998, placing it among the city's earliest specialty operations — well before the third-wave infrastructure that would reshape Austin's cafe culture in the following decade. The roaster built its identity around a tight roster of signature blends, each carrying its own name: Karmadillo, Stella Cometa, West Pole, and Emporium have remained anchors of the lineup across more than two decades of operation. The founder's name is not publicly documented.

Founded at a moment when specialty coffee resources in Austin were sparse, Cuvée grew into a recognized local brand and eventually expanded into nationwide direct-to-consumer shipping. The operation has since added an equipment retail component to its coffee program, stocking Breville espresso machines and Baratza grinders alongside its bagged coffees.

The current lineup centers on blends rather than rotating single origins. Karmadillo is a dark espresso blend of Central and South American coffees; Stella Cometa combines washed and honey-processed lots from the same regions for a medium espresso profile. The Emporium blend draws from multiple single-origin selections into a medium-roast everyday drinker, while West Pole represents the dark end of the roast spectrum.
