Founded date and founder name are not publicly documented in available sources, but the roaster has drawn consistent attention from international coffee press since at least 2022.

Calendar publishes an annual impact report that breaks down the prices paid to producers, the company's environmental footprint, and its finances — a level of supply-chain transparency that remains uncommon among roasters of its scale. The Coffee Vine noted in November 2022 that the Galway operation had built a following around fresh, seasonal lots from the rugged west of Ireland, describing it as a 'colourful roaster' with a clear sense of identity.

The current catalogue draws from Peru, Rwanda, Colombia, and Ecuador, with a mix of espresso and filter offerings. Super Nature, a certified organic Peruvian espresso, and Big Nothing, a low-caffeine Colombian decaf, round out a range that balances accessibility with traceability.
