Assembly's current offering spans origin-focused single-origin lots across East Africa and Latin America. Recent releases include a Tanzania Edelweiss Estate natural processed as pineapple, lime, and viscous; a Guatemala Santa Irene Geisha profiled as pomegranate, jasmine, and tea-like; and a Colombia Jhoan Vergara Chiroso. The house menu also includes a 'House Selection' blend and drip coffee bags for convenience retail. The roastery runs SCA-accredited Sensory Skills training on-site — one customer cited an instructor named Raquel by name — suggesting the operation functions as an education venue as well as a production facility.
